apple cinnamon cheesecake recipe: photographer, wa

This recipe turned out so good I think I need to share it with my friends! I have never made a cheesecake before but my husband LOVES cheese cake… well I guess just about everyone loves cheesecake now that I think about it, but this one looked especially good, and not too hard to make. The coolest thing is that I finally had a reason to use that beautiful spring form pan that has been sitting waiting in the cupboard since our wedding!

My 4 little helpers were home and excited to bake with me. I had grand plans to take photos of them helping out in the kitchen, then chaos ensued.. 4 year olds tossing ingredients in, me unsure of who added what nervously putting the cheesecake in the oven… 45 minutes later deciding I would probably need to just bag the idea and bake something I KNOW.

Looking back over the directions I became pretty sure that at least one egg and the flour were never added… so I decided to give it another go. * I think in the future a check list would be a great idea when baking with lots of help!

The second time around the girls had become bored with baking and decided to make paper snow flakes instead. I carefully measured and to my amazement it ended up looking just right.

After decorating the top with baked apples and delicious  cinnamon glaze I put my creation in the refrigerator overnight.

When we sliced into it the next evening after dinner it was gobbled up with lots of mmmmmmm’s and that night my family ensured me that it was good by asking me to make it again every year.

Apple Cinnamon Cheesecake 

  • 1/2 cup butter, softened
  • 1/4 cup firmly packed  brown sugar
  • 1 cup all-purpose flour
  • 1/4 cup quick cooking oats
  • 1/2 teaspoon ground cinnamon
  • 2 (8 ounce) packages cream cheese, softened
  • 1 (14 ounce) can, Sweetened Condensed Milk
  • 3 large eggs
  • 1/2 cup frozen apple juice concentrate, thawed
  • 2 apples sliced thin

 

  • Cinnamon Apple Glaze:
  • 1 tablespoon butter
  • 1/4 cup apple juice concentrate, thawed
  • 1 teaspoon cornstarch
  • 1/4 teaspoon ground cinnamon
  1. Preheat oven to 300 degrees F. In small bowl, beat 1/2 cup butter and sugar until fluffy. Add flour, oats, walnuts and cinnamon; mix well. Press firmly on bottom and halfway up side of 9-inch springform pan. Bake 10 minutes.
  2. Beat cream cheese until fluffy in large bowl. Gradually beat in sweetened condensed milk until smooth (do not overbeat). Add eggs and apple juice concentrate; mix well. Pour into prepared pan. Bake 45 minutes or until center springs back when lightly touched. Cool.
  3. Cook apples in remaining 1 tablespoon butter until tender-crisp in large skillet. Arrange on top of cheesecake; drizzle with Cinnamon Apple Glaze. Chill. Store leftovers covered in refrigerator.
  4. Apple Cinnamon Glaze: In small saucepan, combine apple juice concentrate, cornstarch and ground cinnamon; mix well. Over low heat, cook and stir until thickened. (Makes about 1/4 cup)
